Peanut Butter & Jelly Stuffed Protein French Toast 🥜🍓

👩🏻‍🍳INGREDIENTS:
For the French toast:
4 slices of @eatroyo artisan bread 🍞
1 egg 🥚
1/3 cup unsweetened almond milk 🥛
2 tsp peanut butter
30g vanilla protein powder
1/2 tsp vanilla extract
1/2 tsp cinnamon

For the filling:
2 tbsp peanut butter
3 tbsp jam of choice

👩🏻‍🍳INSTRUCTIONS:
Blend egg, almond milk, protein powder, peanut butter, vanilla, and cinnamon, then pour into a shallow dish. This batter will be a little bit thicker than your standard French toast batter. Spread the peanut butter evenly among two slices of bread and jelly on the other two, and sandwich each jelly and pb slice together. Soak both sandwiches in the egg mixture until fully saturated. Allow them to really soak up all of the French toast batter. Cook on a griddle or pan for 3–4 minutes per side until golden. Serve with maple syrup and enjoy!
