Ingredients: 600 g white onion (yields 500 g peeled and sliced) 100 g smoked bacon, chopped 6 g thyme 500 ml demi-glace 500 ml water 150 ml red wine A generous splash of whisky (about 50 ml) Salt and black pepper to taste
Toppings: Sliced mozzarella Croutons or toasted bread Salt and black pepper to taste
Method: In a heated pot, cook the smoked bacon until crispy. Add the sliced onion and thyme, and cook over high heat for about 5 minutes, stirring occasionally. Cover the pot with a lid, reduce the heat to low, and let the onions cook slowly until caramelized — they should become golden brown and soak up all the bacon flavor. Add the red wine and a generous splash of whisky. Cook until the liquid has mostly evaporated. Stir in the demi-glace and water. Bring to a boil, then reduce the heat and let it simmer gently for 45 minutes. Season to taste with salt and black pepper. To serve, ladle the soup into bowls and top each with a piece of toasted bread or croutons. Add a generous layer of mozzarella on top. Torch or broil until the cheese is melted and grilled. Enjoy!
