I have one of those cutting machines, they're great 👍 You can select how thick or thin by the front cutter selection. I'll tell you another secret about McDonald's fries "from the good ol' days." (My girlfriend used to make them). They're cut the night before. Then they're soaked for a few minutes in cold water and rinsed well to get the first starches out. Then, they're changed to a big bucket(s) of fresh water and allowed to sit in the cooler over night to really get the starches out. That's the secret to really fluffy fries. Then they were double fried, as you said, in beef tallow. That's what made them so addictive and every day we'd get out of school, walk over to the local McDonald's and get a large fry and a Coke. No burgers or shake but we had to have fries and a "real" (cane sugar) Coke. The vegans put an end to fries cooked in fat… Nothing personal. 🙂 Dang… I know what I'm doing tomorrow. 😉
The original Golden Arches French fries tasted the way they did, because they were fried in beef tallow. When the populus became all cholesterol conscious, they quit using tallow. That's when their fries lost their number 1 rating.
