Baked French Toast Casserole
The perfect breakfast, flaky buttery top with a delicious custard like center. The is the perfect recipe for any day especially for your mom on Mother’s Day! Enjoy

Ingredients :
1 loaf of brioche /French bread or 350g pack of mini bread croissants
7 eggs (if you use the 350g bag of mini croissants only use 5 eggs and 1.5 cups milk)
2 cups milk
1/2 cup heavy cream
1/4 cup brown sugar
1/4 cup granulated sugar
2 tsp cinnamon
2 tsp vanilla
1/2 cup berries of choice
Few cubes of butter
Maple syrup and powdered sugar for toppings!
For bottom of baking dish: 1 tablespoon melted butter and 2 tsp brown sugar (optional)
**lightly butter baking pan and set aside.
**cut your bread/croissants into pieces and set aside
**to a bowl add eggs and whisk then add in milk, heavy cream, sugars, vanilla and cinnamon and mix until well combined.
**grease your baking dish with some butter or cooking spray, sprinkle a tad of brown sugar on bottom and add your bread into the baking dish, do tight single layers if using toast slices and making sure all spaces are covered. Fill any gaps.
**pour in the egg mixture and gently using a spoon press down until the bread is pretty much filled with the egg mixture to ensure it soaks up well
**cover with Saran Wrap and refrigerate overnight for best results or you can bake immediately.
**remove from fridge, add a few cubes of butter on-top and berries of choice .
**bake at 425*F for 25-30 minutes until top is golden
**add maple syrup and powdered sugar if you prefer and serve!
Freezes well in disposable aluminum baking dish wrapped with Saran Wrap and aluminum foil, allow to defrost in fridge at least 24 hours then bake as directed.
gluten free-dairy free options: could substitute butter with coconut oil and dairy free milk such as almond, coconut or soy milk, all 1:1 ratio
