How to Build a Soup
Sauté veggies in fat (oil/butter)
Add flour (if thickening), cook 2-3 mins
Bloom spices, deglaze with wine (optional)
Add stock, simmer
Finish (cream, herbs, starch , protein)
Key Ratios:
French Mirepoix – 2:1:1 (Onion : Carrot : Celery)
Southern Holy Trinity – 2:1:1 (Onion : Celery : Bell Pepper)
Greek – 3:2:1 (Red Onion : Leek : Celery) + Garlic (5-10% by weight)
