INGREDIENTS:
– All-Purpose Flour – 1 cup
– Milk – 1 cup
– Eggs – 2 large
– Sugar – 1 tbsp
– Vanilla Extract -1 tsp
– Melted Butter – 4 to 5 tbsp
– Salt – pinch / to taste
– Ripe Mangoes – sliced
– Whipped Cream – 1 1/2 cup
INSTRUCTIONS:
1. In a large mixing bowl, whisk together 1 cup all-purpose flour, 1 cup milk, 2 large eggs, 1-2 tbsp sugar, 1 tsp vanilla extract, 2 tbsp melted butter, and a pinch of salt. Whisk together until smooth.
2. Lightly grease a non-stick pan over medium heat with butter.
3. Pour a small amount (1/4 – 1/2 cup) of batter into the pan, swirling to spread it evenly across the pan. Cook for 1-2 minutes until lightly golden; flip and cook for another 30 seconds.
4. Transfer the cooked crepes to a plate and let them cool slightly.
5. To prepare, place a few mango slices in the center of each crepe, and add a dollop of whipped cream.
PRO TIP: You can dice or slice the mangoes according to your preference!
6. Carefully roll the crepes around the mango slices and whipped cream.
PRO TIP: If you place 2 crepes side by side, it makes it easier to roll it up!
7. Garnish with some fresh cut mango cubes and serve chilled.
