Adding salmonroe to the beurre blanc surprised me in a very positive way, beautiful addition. To my preference, the salmon looks slightly overcooked(however i cant see it clearly on the video, if you say it was still juicy i will take your word for it) yet the crust you achieved looks amazing.
Im really impressed by the choice of adding the salmon roe in the sauce. Ive never seen that done before, and i can already imagine the taste.
