INGREDIENTS
* 3–4 lb chuck roast
* Salt and pepper
* 2 tbsp neutral oil
* 4 large yellow onions, thinly sliced
* 4 cloves garlic, minced
* 1 cup dry red wine (I used cabernet)
* 2 cups beef stock
* 1 tbsp Worcestershire
* 1 bay leaf
* 4–5 sprigs fresh thyme
* 1 large ciabatta loaf, sliced
* Havarti cheese
* Chives

-Sear the meat on both sides
-Caramelize the onions
-Add the wine, broth, seasonings, and meat back in
-In the oven 350 for 3 hours
-Shred and add back in broth
-Add the sliced bread with cheese, bake 350 for 10 min

  2. Guys just remember, the onions take lots of time and stirring to caramelise… and that's before adding the meat in to braise. This could easily be like a 5 hour recipe
