The lemon pie with meringue (or not) is one of my mom’s favorite tarts … and you can not say I’m completely indifferent to this tart that when it is well balanced can reveal a real sweetness (not sour at all). In short all good bakeries in France offer this dessert to taste during a birthday party or just around a fancy teatime. If you want to play with citrus you can mix the lemon juices with some yuzu juice or bergamot juice (fresh are better)
