Place the potato on this flat side and slice it lengthwise into ¼-inch to ½-inch thick planks, depending on how thick you want your fries. Stack the planks and cut them again lengthwise into uniform sticks. For crispier fries, aim for thinner cuts. Rinse the cut fries in cold water to remove excess starch, then pat them dry before frying or baking.
