This one is for special occasions on a cold winter’s day. It’s higher on the sugar than I like most drinks to be – so sip it slowly. Use half the sugar if you want. And don’t say I never share anything good or with sugar in it 😜

Vegan creamy hot chocolate

Makes 3 servings

• 3 cups almond milk
• 1 cup coconut milk (from a can)
• 2 oz 70% dark chocolate, chopped
• 1/4 cup dutch process cocoa powder
• 2 tbsp maple syrup
• 1 tsp vanilla extract
• 1 pinch of salt

Pour the almond milk and coconut milk into a saucepan. Remember to shake the can of coconut milk well before pouring. Heat over medium heat, stirring with a whisk.

When the milk is hot, add the chopped dark chocolate, dutch cocoa powder, maple syrup, vanilla extract and a pinch of salt. Mix with a whisk for several minutes until the chocolate is melted and the hot chocolate is smooth.

Serve immediately.
