Today you are going to learn the secrets to achieve that perfect, Cheesy, Golden and flavorful French onion soup gratinée.
As you can see an onions soup gratinee is made with really few and cheap ingredients.
Onions they are super cheap and available all the year
Bread : bare minimum and cheese to add flavor
The rest is technic and knowledge. To transform 2 or 3 basic ingredients into a food delicacy.

Ingredients: Basic
40 g/1.4 oz of unsalted butter
0.6 kg /1.3 lb of brown onions, or white or yellow finely sliced
8–12 thin slices of toasted baguette
1 liter /33 oz of homemade chicken stock (or beef stock/broth) or vegetable broth for vegans.
100 g /3.5 oz of grated cheese (French gruyere, Conté or Emmenthal)
1 Bouquet garni: (1 bay leave, 2 sprigs of thyme and parsley, pepper corn)
1/2 tsp of salt
1/4 teaspoon of freshly ground black pepper
(Optional 2 Tbsp of plain flour)

(optional 1 small glass of Port or Madeira)
(optional 100ml of white wine)

Garnish
2 Tbsp of thyme leaves or chopped dill

Direction:
1- Peel and slice the onions finely. You can use a food processor if onions make you cry. In a large saucepan add the butter. When the butter is melted add the onions and sauté them. Stir regularly to avoid burning in the bottom. Reduce the onions until soft and a nice brown color is obtained. This glazing can take 1 hour. That is the secret of success. Onions contain a natural sugar, including glucose, fructose and sucrose and when you cook them, that sugar gets caramelized and becomes sweet and flavorful like cooking the Onions on an Australian BBQ.
2- Onions are also a good source of Vitamins minerals and antioxidants.
3- Onions have a low glycemic index, minimum impact on blood sugar levels.
4- Slice and toast the croutons from a baguette.
5- When the onions are well-browned, soft and caramelized, you can in option add some flour (I don’t add any, the onions should be well caramelized to thicken perfectly).
6- Deglaze with 1 ladle of chicken stock or (white wine). (You can use either beef stock, vegetable stock or even only water).
7- Now stir well, and add the remining of your stock.
8- Add a bouquet garni and bring to a boil: then on slow. Simmer for 20 minutes.
9- Check the seasoning, add salt and pepper.
10- Serving now. Remove the bouquet garni.
11- Fill the bottom of your serving onion soup bowl with some croutons. Sprinkle with 2 spoons of grated cheese (French gruyere).
12- Ladle the soup into bowls living 1 cm for croutons and cheese.
13- Add the slice of baguette and cover generously with grated cheese.
14- Grill for 5 minutes under the salamander or bake in the oven at 200⁰C for 20 minutes until you obtain a golden crust on top and a melting cheese.
15- Serve immediately. You can top with chopped chives or Thyme for presentation.
16- You can serve some extra cheesy toasts for hungry guests and kids.

  3. I have a technique that I've been teaching the young ppl i cook for/with; over 20 years, fail proof, peel and don't cut the root end! Make a little flat area on the base, the slice the rings! I'd love you to be a guest chef at our org. The young ppl would show you a goid time! 😂😅😂😅
