Joel Robuchon was one of the most influential chefs in the world, and nothing proves that better than the fact that he was named Chef of the Century.
Today, we’re here to taste his legacy.

  2. Thank you for your honesty and confirm that most of us indeed prefer a nice big juicy piece of chicken and a creamy puree when it really comes down to it. And I think such a dish actually ask more of a kitchen than something that looks like a science experiment. Because to make something simple like that stand out cant be easy. Love it!

  4. This is a good metaphor for where countries are globally right now. I almost feel sad for Asians, esp. the Chinese here. Europeans and especially Americans overdid capitalism and invented luxury that was useless, harmful for the environment, and difficult to justify. They can't sell it at home anymore, so they target the Asian market and sell them a secondhand version of luxury. Many Americans look at this kind of "opulence" for what it is, soulless excess. We learned that only nouveau riche people buy into brands and labels. That actual rich people aren't insecure that way. They wear hand-me-downs. Real luxury is going to a really good bed and breakfast where they make what you like. Not eating pounds of caviar and dots on dots that don't taste of anything because its Robuchon.

    But, the Chinese are flocking to this and other luxury brands because that is what they are being told success is. And good for them, fifty years ago, they were starving. But, they also haven't felt the emptiness all of this "luxury" will inevitably leave them with. They are where the US was 100 years ago. The reality is the Americans have left it and are interested in the kind of artisan wisdom and craftsmanship that China was (and is turning its back on). I would pay an arm and a leg for hand crafted Da Hang Pao. Chinese handcrafted tea with the wisdom of millenia. A pound of that would run about $600 like the price of this meal…except that's about 600 cups of tea, or a dollar a cup…less than coca-cola.

    But, here we have this European dandy being like "look guys!!! It's expensive." But, his "MTV Cribs" approach is dated, the food here is dated. America doesn't have a middle class anymore. We can't afford this or houses, so anything tangible matters. I'm not impressed, I know how this story ends (how the 1990s ended). This guy should too. But, who can blame him, he's a white guy with an overpriced product to sell. I'm not interested in your style…bring me substance. The saddest thing about it all…going to a country with a food culture as rich as China…and pretending you're in Paris.

  6. I, also, occasionally find myself in situations like this. Unfortunately, I still haven't figured out how to pay for the 2-3 bottles of 1996 Krug and a couple "by the glass" selections. C'est comme ça.

  7. Could you please try Michelin star restaurants inspired by Asian cuisines? I Love your content but I feel like the restaurants you try mainly revolve around food inspired by European cuisines

  8. if this were 1850s this guy would be visiting plantations and judging how well the slaves built them, the food they grew and cooked for him and complimenting the plantation owner

  9. I thought my $10 lunches where expensive! I won't complain about it again! This dinner is fancy! Imagine have it every week for $500.

  10. I am still waiting for someone to do a chain tasting restaurant. I feel like it's a niche that could take off. Imagine $90 per person which includes two mediocre wine glasses, and a cheap ingredient but well executed 6 course meal, targeting a 90 minute eating time.

    This is to say, can you please provide a credit section in the description for the music you use in your videos? I am particularly in love with that little snip bit of a song used between 1:10 and 1:44. Perfect song to pull interest into the high level extravagance of the hotel. If anyone knows this song, PLEASE tell me!

  16. Why do you speak so strangely? Youre forcing an accent you clearly cannot control and its just awfully distracting, just speak like normal rather than pretending to have this "fake snobby" accent
