Ultimate Keto Fries
Ingredients
3/4 Cup Almond Flour
1/4 cup coconut flour
1 T Xanthan Gum
2/3 cup hot water
1/4 cup grated Parmesan cheese
1/2 tsp garlic powder
1-2 tsp Mashed Potato Extract
Salt, to taste
Avocado Oil or Beef Tallow for frying

In a yellow bowl, combine the almond flour, coconut flour, xanthan gum, Parmesan, and garlic powder. Mix thoroughly.
Add the hot water and mashed potato extract, stirring and kneading until a proper dough forms
Let the dough rest for 15 minutes so that the water is fully absorbed.
Add a little more water if too dry and let sit again
Press the dough out to about 1/4 inch or thickness or more depending on your fry shape
Cut the dough into French fry–shaped strips, whatever size you like. Try to make them even so they cook uniformly.
Heat up your deep fryer or put oil or tallow in a pan so the fries are partially submerged over medium-low heat.
Fry in batches until golden brown on all sides, about 3–4 minutes per batch.
Remove with a slotted spoon and drain on paper towels.

OR
Preheat your oven to 400°F
Put the dough strips on a parchment-lined baking tray and brush or spray them with avocado oil.
Bake for 10–15 minutes, tossing halfway through, until they’re golden and crispy

Immediately sprinkle the hot fries with salt while they’re still vulnerable.

  1. Hi Victor- I really miss good crispy French fries. 🍟 instead of using expensive $$$ mashed potato extract I use 1 tsp of instant mashed potato flakes for the authentic potato flake flavor. Putting the resting dough mix into a medium sized ziplock and flattening it, then freezing for and additional 15 minutes. This firms it up. Then cut away the ziplock and easily slice nice thin potato fries. I use a chopstick as a sizing guide, running my knife along the edge. Thanks for sharing your recipe. ❤❤❤

    .I see the KetoTwins have used them in their tater tots, I think. Really jonesen for fries…shoestring, steak, crinkle, matters not…BUT if u could figure out hiw to cut them waffle fry….now THEN!! 🎉🎉 Great video and recipes as usual, Victor

  5. UPDATE: assuming serving size is 12-15 small/medium fries, this would be roughly 6NET grams using the extract. If swapping out the extract for the instant mashed at the 1 teaspoon suggested (by a commentor) the net carbs would be 6.5…so only .5g difference. It probably will become a taste preference, but glad to know someone suggested and we have options and only .5g different for tasty FRIES!! 😋 (Or use this to make tater tots w/instants..😂so many fries, so little time!!

  10. I never eat almond flour again wound up at the hospital with kidney stones and almost died! almond flours are pure oxalates and cheese did nothing to prevent it like others said
