Ingredients:

200g dark chocolate (at least 54% cocoa)
60 g sugar
5 eggs (separated)
1.25L heavy cream
Instructions:

Melt the Chocolate:

Gently melt the dark chocolate using a double boiler or microwave in 20 second intervals. Let it cool slightly.
Whip the Egg Whites:

In a clean, dry bowl, beat the egg whites until soft peaks form. Gradually add half of the sugar and continue whisking until stiff peaks form.
Prepare the Yolks:

In a separate bowl, whisk the egg yolks with the remaining sugar until pale and creamy.
Combine Chocolate & Yolks:

Gently mix the melted chocolate into the egg yolk mixture until smooth.

Whip the Cream:
In another bowl, whip the heavy cream until soft peaks form.
Fold Everything Together:

First, gently fold the whipped egg whites into the chocolate mixture in batches, keeping as much air as possible.
Then, fold in the whipped cream carefully to create a light, airy texture.
Chill for at least 4 hours before serving.

Use a piping bag or airtight container and refrigerate for at least 4 hours (preferably overnight).
Garnish with shaved chocolate, cocoa powder, or whipped cream before serving.
