Cook on both sides, salt & pepper, rest on plate when done
Olive oil and butter again
Add 2 chopped shallots
Deglaze with a splash of white wine
Crème fleurette légère (whipping cream in English)
Add dried rosemary, S&P
Big spoonful of mustard ancienne
Stir a bit
Put chicken back in, cover in sauce
Cook for a few min
Top with parsley
