French Onion Mac & Cheese
2 tbsp olive oil
5-6 Spanish onion, thinly sliced
5-6 garlic cloves, minced
the leaves from 2-3 sprigs of thyme
1/4 cup balsamic vinegar
2 cups heavy cream
1 qt beef stock
salt and pepper
1lb of your favorite pasta
8-10 oz swiss or gruyere
8-10 oz parmesan
2 cups bread crumbs

I like you didn’t add any shortcuts to your caramelized unions. No sugar, no vinegar. I personally use 1tbsp of butter and only add water once the onions have used up all their water. It takes about 2-3 hours for me to make them so it’s a rare treat.

There is one trick I now use: start the sliced onions out with water and let them soften down more quickly (America's Test Kitchen I think).
The old Maillard reaction = brown bits to die for…! LOL
