This is a great dish that you can make with your family or just a good EAT FOR FRIENDS AND RELATIVES COME OVER. Theres lots of history behind COQ AU VIN. Originated in France, but now love and enjoyed world over.

Ingredients needed for this recipe:
6 strips bacon chopped into small pieces
6 boneless, skinless chicken thighs
2 large carrots chopped
10 ounces pearl onions peeled
7 ounces button mushrooms (leave them whole)
4 cloves garlic minced
2 cups red wine (I used Zinfandel)
1/2 cup chicken broth
2 heaping tablespoons tomato paste
4 sprigs fresh thyme
1 tablespoon cornstarch + 2 tablespoons cold water (for slurry)
Salt & pepper to taste
I used the 6 qt Instant Pot Duo for this recipe – you can easily double it if you have the 8 quart model. You could always sub the bacon for pancetta if you like. Let me know what variations you try in the comments section!
