French Meringue

3 x Eggs
150g x Caster Sugar
1 tsp x Vanilla Extract

Lemon Juice or Vinegar to clean mixing bowl

1. Preheat the oven to 110°C and clean your mixing bowl with a drop of lemon juice or vinegar.

2. Separate 3 eggs and place the whites into the mixing bowl. Whisk until thick and foamy.

3. Next, gradually spoon in the caster sugar until fully incorporated and whisk in the vanilla extract. The mixture should look thick and glossy.

4. Pipe or spoon your meringue into your desired shapes onto a baking sheet lines with parchment paper.

5. Place into the preheated oven for a minimum of 1 hour.

  1. i have convection mode in my microwave oven and i didn't preheat it and my meringue burnt.. im new to baking and using microwave ovens..any tips please help?

  2. I had to do everything by hand and it took me 30 min. But I am not sure because I tasted the batter, and it still had sugar particals. Should I keep whisking? Also, I still have about 20 g of sugar left. Can I skip the extra sugar? Any advice will be helpful for future reference
