Ingredients:
Serves 6 people

TOMATO CONSOMMÉ
18 to 24 very ripe Early Girl (I used tomato on a vine) tomatoes
(about 6 pounds) (or the most flavorful variety available), cored and halved
1 dried chipotle pepper, soaked in hot water for about 30 minutes to soften, and drained
6 each red, yellow, and green cherry tomatoes, such as Sweet 100, Golden Jubilee, and Green Grape
Salt to taste –

POTATO CHIPS
1½/2 cups Clarified Butter (page 125)
1½ cups canola oil
2 each very small purple Peruvian, baby red-skinned, and very small
Yukon Gold potatoes
Kosher salt

GRILLED CHEESE SANDWICH
3 ounces white Cheddar cheese, cut into paper-thin slices
12 crustless 2 inch squares Brioche (recipe follows), ¼ inch thick
¼ cup Clarified butter

BRIOCHE
1/3 cup very warm water (110° to
115°F.)
One ¼-ounce package active dry yeast (not quick-rising)
2 1/3 cups (10½ ounces) cake flour
2 cups (10 ounces) all-purpose flour
1/3 cup sugar
BRIOCHE
2½ teaspoons fine sea salt
6 large eggs, at room temperature
20 tablespoons (10 ounces) unsalted butter, at room temperature, cut into 1-inch cubes, plus butter for the pans

  3. There is not a snowballs chance I wold ever spend that much time preparing tomato soup and grilled cheese. My daughter in law worked at the French Laundry for couple years and it was fantastic food! Thomas Keller is one amazing, one of a kind chef, beautiful creations.

  4. I saw someone else make tomato sauce by blitzing the tomatoes in a blender, and storing the blend in a dispenser with a spigot on the bottom. Overnight in the fridge, the bits floated up top and he drained the water via the spigot. Bits made sauce and he just threw up the consome you worked so hard to make as it was a by product 😂

  7. I believe the cake flour may be to blame for the bread disaster. Cake flour is for things like muffins and, well, cake-it forms less gluten. Without enough gluten the bread will fall apart and be crumbly.

  9. Low-gluten bread dough is, by definition, going to be crumbly. It will be soft, but it will be more like a cake than bread. I'm not sure why Keller does that, unless he wants to wow customers that he can make cake dough into bread. Anyway, this is a lot of words to say that I'd make the bread with bread flour and go from there.

    I've been watching this channel for quite a long time, and I must say I've never seen someone put so much effort into baking to then be totally rough with what is made.

  13. How to spot a kitchen poseur : wearing aprons with leather straps or appointments,or the apron is made with wax cotton or other expensive details that can’t be machine washed with reckless abandon, and lastly wearing a knit beanie cap while performing any task in any kitchen period.

  14. This is exactly the kind of lame, overrated, overpriced, over complicated food that an asshole like Gavin Newsome would have, at that stupid French laundry restaurant, with 35 of his buddies, while everyone else is locked down at home, on his order. 🙄

    Oh, and next time you bake a loaf 🍞 in a loaf pan like that, I have 2 words for you- Parchment Paper. 😂

  19. This looks incredibly photogenic. I sort of feel like Keller misses the point of a grilled cheese though. I want a grilled cheese when it's cold and dark outside, when I've been playing in the snow or soaked in the rain. I want it to be warm and comforting. I want to dip my grilled cheese into a thick and luxurious tomato soup. The cold tomato juice thing is probably great paired with… I don't know, something summery. But this is not the grilled cheese experience I'm looking for.

    That being said, your video did not miss the mark. The mark missing is entirely Keller's doing. I enjoyed the whole thing!

  20. I can't see/hear/think about grilled cheese without remembering the time Gordon Ramsay tried to make fancy grilled cheese, completely failed, lied about how magnificent it turned out and the internet called his ass out 😅

  22. Like I'm sure this is amazing, but the effort compared to a regular grilled cheese and tomato soup at home is wild. Like you can buy the nice version of everything in this video at the grocery store, have a delicious meal and not spend days worth of prep on it. Definitely not an at home recipe for normal people.

  23. I have a great tip to prenvent buttering your plate or counter top while making grilled cheese. Butter your first slice and keep it butter side up. Butter your second slice and place it on top of the other one butter side down (so both buttered sides are together). Load the top slice and when ready to fry, lift the upper slice with the topping and place in the pan. Lift the second slice, flip it buttered side up and place on top of the slice in the pan. Boom, clean surfaces everywhere (there may be some crumbs on your surfaces, though)

  24. Having tomato consushit instead of real tomato soup literally destroys the entire concept of a grilled cheese and tomato soup! What a disgusting waste of opportunity to have something actually good! Especially CHILLED tomato water instead of fucking hot tomato soup!! WHO THE HELL CAM UP WITH THIS AND WHY DOES ANYONE LISTEN TO THEM?!!???!
