I use to prepare this recipe at Thomas Keller’s Bouchon in Beverly Hills everyday for about 2 years straight and I’m still in love with it to this day. It’s French classic that has serious lasting power and as a fan of fly fishing, trout is close to my heart in many many ways. 1/2 lb green beans
1/4 cup water
3-4 tbsp butter
2 tbsp lemon juice, fresh

I’ve literally been looking for a source for Trout and saw Smyth*** uses trout from the same people. It’s pricey but I just might have to do it. Been noticing trout on many fine dining menus and like the flavor.

Seems like a massive disservice to promote someone who wishes to promote Raw Milk which is known to cause diseases. There are obviously newer methods of pasturization that are better served than mass-produced pasturization, but promoting Raw Milk is a misstep.
