For me, the humble onion is the star of my kitchen. Dry fried and crispy, dehydrated, battered and fried, braised until falling apart… I keep bowls of caramelized onions in my fridge for omelets, burgers, you name it.
And for entertaining, I always turn to the magic of the onion tart, of which there are countless variations, but I love the pissaladière. It’s simple, easy to make, has insane deep flavor profiles, great textural contrasts and is just plain old f*cking delicious.
Emblematic of the culinary traditions of Nice, it’s a pastry base topped with caramelized onions, olives and anchovies. I add roasted peppers for texture and sweetness.

I don't know how sanitary it was to make food you are handling and then slice and eat and carry your dog but I guess you are not sharing it with anyone else but you and your dog but I would tell you to be very careful about handling your pets and food be safe

Onions are absolutely not good for dogs, they are toxic. They contain N- propyl disulfide which wrecks red blood cells and will cause anemia, especially in smaller breeds like yours. I will always love your stuff Andrew but c'mon now, stick to feeding humans.
Tip #1: Don’t eat anything out of Andrew Zimmern’s disgusting unsanitary kitchen where he holds his dog and scratches/pets it above the food.
Tip #2: That is not a Pissaladière.

I like your method of slicing the anchovies into slivers. Too much anchovy flavor overpowers even a rustic dish like Pissaladiere.
