If you’ve never had a French omelette, here is my best description: A delicate, silky, buttery & cloud-like eating experience. The French omelette isn’t so much about it’s filling like the American omelette, rather a delicate cooking technique and BUTTER, LOTS OF BUTTER!
Almost every tutorial you see on how to create a French omelette will tell you that you need a non-stick skillet. While this isn’t untrue, you can absolutely do it and nail it with a stainless steel pan. This video will show you how.

Cant afford to mess up my eggs with how much they cost now!!
Jokes aside, looks great, I'll have to try them myself soon.
I like cooking a french omelette every couple of years when I buy a new pan. I haven´t made one in probably 5 years. time to buy a new pan, I guess.
No way you can separate the eggs from the stainless steel surface 3 or 4 times by stirring. The eggs will stick for sure, at least 8 out of 10 times. And if you are cooking for real people in real life and if the eggs stick, you are screwed and have to scour the stainless pan and start all over again. Crap shoot cooking doesn’t work inna restaurant or at home unless you are creating “content”.
