How to make a great Armagnac? You need lots of patience and continuous attention from the moment each barrel is filled, exceptional terroir, a vine in perfect health, a high quality natural wine, a very gentle and very slow continuous still, oak barrels (new and used), an aerated aging cellar, temperature and constant humidity, and lastly continuous attention and a lot of patience. 🙂
Ive never seen another spirit having so much attention to detail during maturation as Armagnac. After one year of maturation, which is considered to have begun on April 1st after the official distilling period is over, the spirit can legally be sold as Armagnac. However many eaux-de-vie will at this point still be just at the start of their journey. The cellar master will cultivate the spirit in their care, moving it from cask to cask from 1-5+ times during its 15 year period of aging for example to promote aeration and manipulate its interaction with new and used oak. Some barrels will be marked for short-term maturation, others for long aging, and some exceptional examples for bottling as vintage expressions. There will also be a deciding factor to continue the aging process in Demijohns (glass bottles).
