  1. well, the batter is adding calories but does nothing in terms of crispness. What indeed does it is the boiling water bath which will remove any unwanted starch from the potatoes and allow them to get crispy. And don’t forget that over here, in Europe, homemade fries are fried TWICE ; once for about 8’ and when the oil is back to frying temp (180 degrees C) comes a second 5’ frying time. Remove, pat extra oil, add salt and 😊 ENJOY!
