Nice that you are using up some wilted celery for your blanquette and other stews. I wish horticulturalists would invent a celery with just two or three stalks, LOL. Until then it will take me a month to use one up.
Experiencing cold snaps at present, I can't be more readily to try these stew recipes.
Yum! I was just about to look up your recipe for the blanquette since I remembered it was simpler than the traditional one with the roux.😅 May I ask what type of cream you use for it?
And also, in general, do you simmer your stews uncovered or just take the lid off at the end of cooking, to reduce the jus?

Thank you for sharing your recipes and cooking techniques. A large assortment of fresh ingredients balanced between lean meats and vegetables. Excellent choices. I’m remarking to myself about how efficiently you prepare your meals and use your kitchen space. You do that very well and even have room for potted herbs and plants. I recently reorganized my kitchen however I haven’t created any space for potted herbs. I do a great deal of baking, all types of bread, sourdough, brioche, baguettes as well as tarts, gâteau du rois and now Madeleines. My baker’s bench, mixers and ingredients take up a lot of space. What I make I give away as gifts. A bientôt. Joseph.

I was surprised to see the combination of mustard, tomatoes and zucchini in the second stew – I’ve never tried that before, it sounds delicious! I also like the way you start your recipes with butter – I usually use oil to brown the meat or sauté the onions. Thank you for these new ideas!

Flat of 24 eggs cost here in states $32.89 . A dozen cost $ 8.99. Thankful I dont have to buy eggs , my city allows us to have chickens.

Do you do the intermitten fasting? Can you make a video about the best hours where it is good / healthy to eat? As I could notice, you eat breakfast 7-8.00, lunch 1 pm, dinner 7 pm? So you have break between meals 5-6 hours, right? It is suggested now (especially for women) to fast according to your cycle (I read "Fast like a girl" Dr Mindy Pelz). What is your opinion about that?
When my celery wilts a little. I cut the bottom and place it in water for a day. Like a flower it comes back to life.😊
The recipes look delicious. I will be trying some of them. I've noticed that you cook large amounts of meat and other than bread, I have not noticed you consume many starches. Do you follow a mostly low-carb diet? I enjoy watching your videos. Thanks!
