French Onion Soup
– 4-6 large onions, thinly sliced
– Butter
– Olive oil
– White wine, one cup
– Sherry, one tablespoon
– Flour, one-two tablespoons
– Beef broth, 6-8 cups
– Salt
– Pepper
– Gruyere cheese, grated
– Baguette, sliced into pieces
– Parsley, for garnish
Orange Glazed Ham
– 1 large ham
– 2 cups of orange juice
– 1/4 cup of brown sugar
– 2 tablespoons of soy sauce
– 1 teaspoon of orange zest
– 1 tablespoon of cornstarch
– Black pepper
Directions
– Cut your onions thinly add them to a medium low heat skillet with butter and olive oil. Cover if possible for about 5 minutes to get the onions sweating and releasing their liquids. Season onions with salt and pepper and lower heat to your lowest and let onions slowly caramelize over time. I used four onions and it took about 90 minutes to really caramelize them. Don’t rush this process, you may add more oil, butter or a splash of water to prevent burning. Stir occasionally but keep an eye on the onions. Once Caramelized, add your white wine, sherry and flour and give it mix. Scrap the pan as you go. After you scraped the pan, add in your beef broth and let sit for 10 minutes on a simmer. Add your onions to bowls, add your sliced baguette pieces, scatter Gruyere and add to a broiler until cheese is melted and lightly browned. For the ham, make your glaze by combining orange zest, juice, soy sauce, brown sugar, black pepper and cornstarch. Glaze your ham with this for the first time and add your ham to 325f oven and glaze ham every 20-30 minutes until the ham reaches an internal of 140 degrees.
