Do you salt the water you soak the chips in at the start?

I cook my chips on a preheated cast iron pan.

Hmmm yes. I'm thinking a scotch fillet done on the Weber Kettle with charcoal, home made chippies and a couple of eggs on top.

We eat fries with bread in southern Africa it's standard fare
if you want them cooked more evenly in the airfryer, you can shake them every 2-4 min?
Cut potato to 10×10 mm.
Fry in 100% beef fat at 170 degrees for 10 minutes.
Allow to cool completely to room temperature.
Then finish frying at 190 degrees.

It's just a chip. By the time you salt and vinegar it, it's a chip.
Probably not a good idea to put them in the fridge after boiling. I don't think your fridge will thank you, nor any other stuff that's in there…

Andy, those were the best home-cooked chips I’ve ever made. The vinegar boiling trick is absolutely insane! I was skeptical at first, but man, they stayed crunchy till the very last bite. I can't thank you enough. Looks like I can officially take my dad’s place as the family’s chip maker. Cheers again, mate!
