Relax! You’re on vacation!
My wife and I spent a week in Paris last October. Watching your videos/tips helped tremendously. That said, we honestly didn't experience this. Service was very good, and not as slow as we anticipated.
I never had a bad meal in Paris, walking off the street into a random restaurant, always fantastic. I was never bothered by any service we got, maybe we got lucky, or maybe we were just in no rush vacation mode.
If they let you wait, they fucking hate you
