Candied Croissant Croque Madame Recipe

(Makes 2 servings)

Ingredients:

• Croissants: 2 large, preferably day-old for easier handling
• Butter: 2 tbsp (for frying croissants)
• Ham: 4 slices (or substitute with turkey or smoked salmon)
• Gruyère cheese: (or substitute with Swiss cheese)
• Eggs: 2 large (fried sunny-side up)

For the Béchamel Sauce:
• Unsalted butter: 2 tbsp
• All-purpose flour: 2 tbsp
• Milk: 1 cup, warmed
• Salt: To taste
• Nutmeg: A pinch (optional, for classic French flavor)

Step-by-Step Instructions:

1. Make the Béchamel Sauce:

1. In a small saucepan over medium heat, melt the butter until foamy.
2. Add the flour and whisk continuously for 1-2 minutes to cook out the raw flour taste (but don’t let it brown).
3. Slowly add the warm milk, whisking constantly to avoid lumps.
4. Cook until the sauce thickens, about 2-3 minutes.
5. Season with a pinch of salt and nutmeg. Set aside.

2. Prepare the Candied Croissants:

1. Flatten croissants using your hands or a rolling pin to create an even surface for frying.
2. Heat a skillet over medium heat and butter both sides of croissant.
3. Place the croissant in the skillet and fry until golden and crisp.

3. Assemble the Croque Madame:

1. Add ham and cheese.
2. Spread a thin layer of béchamel sauce.

4. Melt & Finish:

1. Place under broiler for a few mins to melt cheese.

5. Top with Fried Egg:

1. Fry egg sunny-side up in a separate pan with a little butter. Season with a pinch of salt.
2. Place one fried egg on top of each croissant sandwich.
