I'm also from Sacramento (actually Stockton); in fact, I received one of my BAs and MA from CSUS, and am now a retired professor living in South Korea (I taught here in Korea from 1997 until 2022, when I retired from Korea University). I have been watching and enjoying your videos from the beginning. I love France, and love the location you've chosen, but my goal is to move to the south of Italy, for I love to eat and make Italian food much more than French. I just wanted to share with you the construction of your Beef Wellington; you were supposed to spread the mushroom mixture evenly on the pastry, then wrap it all around the filet so that the mixture evenly surrounded the beef : )
