It was early in the morning and I was wondering around Les Halles. I don’t remember what I had done all night but the sun was still an hour or two from appearing. I was hungry. I wanted onion soup, a neighborhood speciality in the 19th century for labors and revelers. I was hoping for a stall or cafe, anything really that had hot onion soup. Sadly, all I found was a McDonalds, so I had an egg McMuffin. McDonalds does sell soup. So enjoy this recipe for French onion soup and make it soon.

In a medium saucepan, melt 1 tablespoons of butter. Add in 16ox of chopped onion. Stir frequently until well caramelized. Should take around 30 minutes. Near the end, add in 1 minced garlic clove and 1 tablespoon of flour. Then deglaze the pot with 1/8 cup white wine. Next, pour in 1 1/2 cups beef stock and 1/4 teaspoon worcestershire sauce. Season with 1 bay leaf, 1/4 teaspoon thyme, 1/8 teaspoon salt and 1/8 teaspoon pepper. Allow to simmer for 10 minutes. In the mean time toast some baguette slices and grate 2oz of swiss cheese. When the soup in finished transfer it to an oven proof bowl or dish, place slices of baguette over the soup and top with the grated swiss cheese. Broil the soup until the cheese has melted and just started to brown. Serve hot. Bon Appetit!
