French Onion Soup

(For 3-4 servings)

Ingredients:

5 x onions (large)
1 x liter of beef stock
1 x bundle of thyme
2 x bay leaves
3 x whole garlic
500g x gruyere cheese
1 x French baguette or crusty bread
and some salt & pepper & olive oil

Cooking:
– cut the top of the whole garlic and drizzle with olive oil. In a small pan, roast it in the oven at 350F for 30 min until soft
– thinly slice onions and place on a large roasting pan
– generously coat with olive oil and sauté until caramelized and soft. This may take 30min to 1 hr depending on the size if your pan. Large pans will be better for this as it will provide more surface area for cooking the onions down.
– deglaze pan with beef stock and let it simmer. Add thyme and bay leaves.
– reduce until the flavour and consistency is to your preference
– Optional: Add some Cognac (brandy). You can also deglaze with white wine,
– toast slices of baguette/bread and then spread the roasted garlic cloves onto
– preheat oven to 500F or max broil setting
– assemble the bowl
– fill bowl 3/4 up with soup, layer some shredded gruyere cheese, then a couple slices of bread, and then top off with more cheese.
– make sure to do this quickly to prevent the cheese from over cooking in the soup.
– Optional: torch the top afterwards for added color
