I LOVE French Onion soup and I never thought I would make it myself but to my absolute delight, it was SOOOO easy to make. This will be made all the time at my house and I am super pumped about that.

Ingredients
4 large yellow onions, thinly sliced
4 tablespoons unsalted butter
1 teaspoon salt
1 teaspoon sugar
8 cups beef broth
1 teaspoon dried thyme
1/2 teaspoon black pepper
1/4 cup dry white wine (optional)
1 French baguette, sliced
2 cups grated Gruyère cheese
Fresh parsley, chopped (for garnish)

Directions
1. In a large skillet, melt the butter over medium heat. Add the sliced onions, salt, and sugar, stirring to combine. Cook for about 15-20 minutes until the onions are soft and lightly caramelized. This part will make your kitchen smell heavenly!
2. Transfer the caramelized onions to the crockpot. Add the beef broth, dried thyme, black pepper, and white wine (if using). Stir everything together to combine nicely.
3. Cover and cook on low for 6-8 hours or on high for 3-4 hours. Just let the magic happen while you go about your day!
4. Once the soup is ready, preheat your oven to 400°F (200°C).
5. Place the baguette slices on a baking sheet and toast them in the oven for about 5-7 minutes, or until golden brown.
6. Ladle the soup into oven-safe bowls or crocks. Top each bowl with a toasted baguette slice and sprinkle generously with Gruyère cheese.
7. Place the bowls on a baking sheet and bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly. Keep your eyes on it – you want that cheesy goodness to be golden!
8. Remove from the oven and garnish with chopped fresh parsley before serving. Voilà!
