Welcome to our 12 Days of Recipes! At Joy Holiday Family, we love diving into the traditions that bring us together. The popular carol “Twelve Days of Christmas” is actually inspired by the ancient Christian tradition known as Christmastide. Each day of the song holds significance to the time leading up to the Epiphany on January 6th.

Day 3’s recipe for Three French Hens is Casserole Chicken, a French-inspired dish that highlights poultry

-4-5lb chicken, separated (2 thighs, 2 breasts, 2 legs, all bone-in and skin-on)
-1/4 cup butter
-2 apples, cored and thinly sliced
-6 ribs of celery, chopped
-1 onion, grated
-3 sprigs parsley
-1/2 tsp salt
-1/4 tsp paprika
-2 1/2 tbsp flour
-2 cups chicken stock
-Tarragon or basil
-Parmesan

-In a large pot on medium heat, warm the butter
-Sear the chicken on all sides for a few minutes until golden; remove chicken from pot
-Add apples, celery, onion, parsley, salt, and paprika and cook for a few minutes
-Add flour and slowly whisk in chicken stock; bring to boil and simmer for a few minutes to thicken
-Return chicken to pot, cover, and cook for about an hour until chicken is to 165F
-Add fresh tarragon or basil and parmesan to dish to serve
