I love this place along with a few others in that shopping area! I was skeptical about the French fusion style at first because of a place that served potage style ramen (I think near Odaiba) that I didn’t care for. However, Henshinchuu, Ebimaru/French Noodle Factory, and La Maison Du Ramen really changed my mind. I think Afro Beats also used French technique, but don’t remember if they advertised it that way. Crazy delicious nonetheless. What other French influenced ramen shops do you recommend. I know I’ve been to more, but those stuck out in my head. Also, have you been to Zweiten Laden? It was very different but in a good way. It has a German name, but nothing tasted German about it except I may have tasted a beer based marinade for the ajitamago. Not quite sure. It’s one of my favorites, though.
