Ingredients
1 lb mushrooms, finely chopped (any type you like 🍄)
1 large shallot, finely chopped
2 tbsp unsalted butter 🧈
4 oz Panko breadcrumbs 🍞
3-4 sprigs fresh thyme 🌿
1 clove garlic, minced 🧄
Salt & pepper to taste 🧂
Method
In a pan over medium heat, melt half of the butter.
Add the shallot and cook for 2-3 minutes, stirring occasionally, until softened. (Season lightly with salt).
Increase the heat to high and add the chopped mushrooms.
Add thyme and season with salt (this will release moisture from the mushrooms, so stir until the liquid evaporates and the mixture becomes dry).
Lower the heat back to medium and add the remaining butter.
Once the butter is melted, stir in the breadcrumbs and minced garlic.
Season with salt and pepper to taste.
