You guys get crappy dragon fruit for the reason that growers cut it before it's ripe, the fruit does not have a chance to develop its flavor and sweetness, that is just one strain of about 50 that I know of, and they all exhibit different flavor profiles and sweetness levels. I'm guessing for the fruit to make it to market fresh, it has to be cut early.
