Recipe:
2 lbs French green beans (clipped)
6 tbs butter
1 yellow onion (julienned)
6 cloves garlic (minced)
1 lb baby Bella mushrooms (sliced)
6 tbs flour
4 c whole milk
1 c parsley (chopped)
Salt and pepper to taste
1 cup French fried onions
Preheat oven to 350. Bring a large pot of water to a boil cook the green beans for 2 minutes then transfer to an ice bath. Strain once cooled and set aside. Heat a Dutch oven over medium heat. Add the butter and allow to melt. Add the onions and garlic and sauté until the onions start to become translucent. Add the mushrooms and continue to sauté until most of the liquid releases from the mushrooms evaporates (about 5 minutes) season with salt and pepper. Turn heat to medium low and stir in the flour, cook for 2 minutes. Add the milk let come to a simmer and thicken. Adjust the salt and pepper as needed, turn off the heat. Fold in the parsley and the green beans. Cover and bake for 30 minutes. Remove from the oven sprinkle the French fried onions over the top and go back into the oven uncovered for 5 more minutes.
