[RECIPE BELOW] High Protein French Onion Pasta

[RECIPE]
1.) To a slow cooker, add (48oz) chicken thighs, (3 Tbsp) Worcestershire sauce, (2 Tbsp) minced garlic, 15g (1 Tbsp) Dijon mustard, 1 Tbsp fine grain salt. 1 Tbsp garlic powder, 2 tsp onion powder, 1 tsp thyme (optional), 2 tsp black pepper, and 100ml (1/2 cup) beef bone broth. (Mix well). Place a rosemary sprig on top. Cover and slow cook on high for 3-4 hours at low for 4-5 hours
2.) Dice 4 yellow onions. Add them to a pan with a pinch of salt. Cook over high heat until all water evaporates and the onions begin to brown. Reduce the heat to medium or medium-low heat, add 30g 2 Tbsp of butter and continue cooling until the enions are deeply browned and caramelized. Note: true caramelzed onions can take 45-60 minutes. Feel free to just brown the onions untl they’re browned“enough” (aka, you lose patience)
3.) Once the onions are caramelized, pour over 960ml (32oz) beef bone broth, 30g (2Tbsp) Worcestershire sauce, 15g (1 Tbsp) soy sauce. 5g (1 tsp) Dijon mustard. and mic unte combinod. Optionally, add a rosemary sprig on top. Turn to high heat and boil the mixture until all liquid evaporates, removing the rosemary haiway through. Set to the side
4.) Prop the cheese sauce in a blender, combine 800g (3 1/2 cups) low-fat cottage cheese 200g ( 1 1/2 cups) Gruyère, 5g (1/2 cup) fresh grated Parmigiano Reggiano 360ml (1 1/2cups) low fat milk, a dash of black pepper and salt to taste, and 50-75% of the caramelized onions. Blend for 1-2 minutes.
5.) Once the chicken is cooked, remove the rosemary sprig and lightly break apart the chicken using tongs.
6.) Cook 24oz rigatoni halfway (50% of the cook time stated on the box) in a pot of boiling salted water. Drain the pasta
7.) Add the half cooked pasta and cheese sauce to the slow cooker with the chicken. mixing everything together. Cook on low heat for another 15-30 mins, covered. Until the pasta is fully cooked and the sauce has thickened.
8.) Turn off the slow cooker and top the pasta with the remaining caramelized onions, and a large handful of chapped chives. Stir well.
