couscous is one of the favorite cuisines of the French.
We were just there two weeks ago and wish we had seen this video before then! We go there often so we will definitely try some of the foods next time. The fried chicken looked delicious and also the Aligot.

I'm in West Central IL, USA. I make the potato/onion/ham/cheese dish a lot in colder months. It's very cheap and filling. I serve it with a salad and crusty bread.
Some of us use corn flakes to coat our fried chicken. That French version looked similar.

That "perfumy" dessert is probably flavored with rose (water)…a very common ingredient in that part of the world. Or orange blossom water (but then it will taste more citrusy than flowery / perfumy)….Turkish delight is often flavored rose with rose water. As for the dessert of phyllo honey and nuts, that's baklava or something close. Love all that stuff. 🙂

Cheese looks good, but it can give brucellosis; markets are totly unregulated and cheese there carries Briucellesis. Never it that stuff unless you want to get really really ill for a long time.

In NYc I carry a small size set (From Air France…50 yrs ago when they served food with class , !)

Had aligot in a town called Langeac in the Auvergne, and bought from the market there. Added a Toulouse sausage and sat by the river and journeyed to another dimension! So love regional markets for amazing delights.
I had a hell of a time finding a recipe for that potato mix and it turns out that my spelling was all wrong. For all you inexpert French spellers out there, the dish is " tartiflette ". An easy to buy cheese substitute should be some grated gruyere topped with a supermarket camembert cut crosswise. We'll see.
