Baked Patatas Bravas Recipe

For the Potatoes:
– 2 pounds potatoes, peeled and cut into 1-inch cubes
– 2 tablespoons olive oil
– 1 teaspoon smoked paprika (optional)
– 1/2 teaspoon garlic powder (optional)
– Salt and black pepper, to taste
For the Bravas Sauce:
– 1 tablespoon olive oil
– 1 small onion, finely chopped
– 2 garlic cloves, minced
– 1 teaspoon smoked paprika
– 1/4 teaspoon cayenne pepper (optional)
– 1 (14-ounce / 400 g) can crushed tomatoes
– 1 tablespoon red wine vinegar
– Salt and black pepper, to taste
Optional Aioli (Garlic Mayo):
– 1/4 cup mayonnaise
– 1 small garlic clove, minced
– 1/2 teaspoon lemon juice

Instructions

1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. In a bowl, toss the potato cubes with olive oil, smoked paprika, garlic powder (if using), salt, and pepper.
3. Spread the potatoes in a single layer on the baking sheet. Bake for 25–30 minutes, flipping halfway through, until golden and crispy.
4. Heat olive oil in a saucepan over medium heat. Add the onion and cook for 5 minutes, until softened. Add the garlic, smoked paprika, and cayenne (if using) and stir for 30 seconds.
5. To the pan, add the crushed tomatoes, vinegar, salt, and pepper . Simmer for 10–15 minutes until the sauce thickens slightly.
6. (Optional step) In a small bowl, mix mayonnaise, garlic, and lemon juice. Set aside.
7. Arrange the baked potatoes on a serving plate. Spoon the bravas sauce generously over the top.
8. Add a swirl or dollop of aioli (if using), or serve it on the side for dipping.
