A pork crown roast is a classic hoiday dish. It’s a beautiful centerpiece on your Holiday table and it’s also fairly inexpensive.
What is a crown roast? It’s a bone in pork loin that is frenched to expose the bones and wrapped in a circle like a crown with butcher’s twine for presentation. In this recipe and video we also stuff it with our sausage stuffing.
Around the holidays, pork crown roasts, are often readily avialble in your local grocery store or butcher. You can typically ask your butcher to create one for you if you like. Alternatively, you can slice and french the loin yourself to create the crown with butcher twine.

Question, we host Christmas Eve and Christmas day events for family … the last two years we have tried to mix up the menu, last year we did appetizers instead of a main course and found that folks really liked it, and ended up interacting more as they kept coming back to the appetizers on the island in the kitchen… any appetizer recipes or ideas you would recommend?

Thank you!! I ordered one for the 1st time because my Mom wants it for Christmas. I have to cook it though and never have. I've only eaten them years ago when I wasn't old enough to cook. 😊 I'm so worried about messing it up because I'm 52 years old and my Mom is the only person in the world I'm afraid of. 👀 I love her a lot too.
My only concern is I’m saving that Weller for neat or rocks. Use the Trace for the mix!

There are numerous independent distilleries in Texas pumping out amazing whiskey right now. You should use your platform to promote some of them for your drinks instead of using a product that is overpriced and unobtainable for most consumers such as Weller Single Barrel.

That looks amazing, Matt. I've seen it cooked before but never with stuffing. Correct me if I'm wrong, but isn't that baby back ribs still attached to the pork loin? Before a butcher separates the two? And as for the drink. For mixing, I would've went with the Buffalo Trace. The Wellers Single Barrel is to drink neat. Lol. Too good for a mixer. I can't find it down here. Me and you have talked about 107 in the past. I need another bottle. And it's difficult to find here in Houston. Well, find one that they aren't charging you 250 to 300 for anyway. I did score a Stagg last week while I was in Bay City. I got it for 130. They been running 250+. This guy just got a case and had two on his shelf. So he sold one on the shelf to me for 130. If you know where I can find Wellers 107 or Single Barrel, I'd appreciate it if you could let me know.

I make a sourdough sage stuffing with Jimmy Dean sage sausage in it and a good amount of fresh sage. So good. You can literally serve it with any protein and be really not mad about it.
