Once the eggs begin to set on the bottom, reduce the heat to low. Continue shaking the pan gently while running the spatula around the edges to keep the omelet from sticking. When the eggs are custardy and mostly set (or cook the eggs to your liking) add some shredded Parmesan or any cheese of choice, use two spatulas to carefully roll the omelet into a log shape. Gently tilt the pan to help roll and transfer the omelet to a plate. Top the omelet with freshly chopped chives.
