This magnificent Gâteau Basque Recipe is simple and buttery, with a soft crust and rich pastry cream flavoured with vanilla and orange liqueur. It also has a layer of blackberry jam, to give it a fresh kick. ● Sweet Dough
2 ½ cups (280g) pastry flour
1 ¾ stick (200g) cold butter
⅔ cup (130g) brown sugar
⅓ cup (70g) granulated sugar
one medium egg (50g)
lemon zest
½ tsp (2g) baking powder
● Vanilla Pastry Cream
1 ½ cup (375g) milk
½ cup (90g) granulated sugar
three large egg yolks (70g)
¼ cup (35g) cornstarch
1 tbsp (15g) orange liqueur
vanilla extract
● Assembly

½ cup (150g) blackberry jam
pinch of salt
one medium egg (50g)
Steps:
1. Preheat the oven to 338°F (175°C).
2. Sift flours and baking powder. Add the sugars, lemon zest and butter and mix using the flat beater (or with a fork till the butter is well incorporated, if done by hand).
3. Add the egg and mix for 10 seconds. Refrigerate for 20 minutes.
4. For the vanilla pastry cream, bring to a boil milk, half the sugar and vanilla. Set aside.
5. Mix egg yolks, the remaining sugar and the cornstarch.
6. Add the milk stirring constantly, strain and return to the saucepan.
7. Place the saucepan over medium heat and cook the cream, whisking constantly, until thickened. Boil the mixture for about a minute. Add the orange liqueur and refrigerate until ready to use.
8. Divide the dough and roll it to 0.2 inch thickness (0.5 cm). Line the baking pan with the first part. Spread a layer of blackberry jam and one of pastry cream. Cover the cake with the other half of the dough. Trim the edges and brush the cake with egg wash. Score the top of the cake with a fork.
9. Bake for 45 minutes.
Tips:
1. Don’t overmix the dough. The idea is not developing the gluten.
2. When making the pastry cream, you don’t need to boil it too much, or it will get lumpy, especially if you’re not whisking constantly. Better leave it a bit undercooked, it will continue cooking in the oven either way.
