RECIPE BELOW
Step 1
Peel some russet potatoes and then cut them in half.
Then cut them again so you julienne them (which is making them into sticks or french fry shapes).
Step 2
Fill a bowl with water and soak the cut potatoes for about 30 minutes. This will get the extra starch off the potatoes, keep them from turning brown, and ultimately makes them crisp better when frying.
Step 3
Heat a saucepan or pot with 2 inches of cooking oil. Heat the oil to 325 degrees F
Step 4
Take a handful of fries out of the water and pat them dry. Then, add the fries to the hot oil and cook for about 5-7 minutes. This is called par frying which means preliminary frying or cooking. It will ensure that they become crispy.
Step 5
When you have par cooked the fries set them aside on paper towels to get ride of the excess oil. Raise the heat on the oil to 350 degrees F.
Step 6
Cook the potatoes again for about 2 minutes or until them become golden brown and crispy
