  6. 1. those look flat and tough. And 2. Avoid doing anything you wouldn't do before modern freezing. Don't freeze your dough. 3. The trifold is probably the mistake here in the texture and height. You were good at bring together only until its barely holding together. This is true for pie dough and biscuit dough (Now is when you rest in cool fridge for 1 to 2 hours BEFORE you roll. And with biscuits and scones you barely roll because you want the tiny air pockets for tenderness.
