  1. Blueberry Bagels
    Ingredients
    300g bread flour
    3g instant yeast
    3g salt
    15g granulated sugar
    75g ice water
    130g frozen blueberries
    7g unsalted butter

    Notes:
    The bread flour I used is high protein flour. For every 100g of flour, it contains 13.1g protein.

    Steps:
    1. In the stand mixer bowl, bring together bread flour, instant yeast, salt, sugar, ice water and frozen blueberries. Beat in medium high speed until well combined. Add in butter, beat until a smooth dough ball forms.
    2. Divide the dough into 6 pieces. Roll each into a small dough ball. Cover with plastic wrap and let rest for 30 minutes.
    3. Dust the dough balls and rolling pin with some flour. Roll the dough balls flat, roll it up, and shape into a bagel. Cover them with plastic wrap. Let rest until 1.5 times bigger.
    4. In a pot, put in 500g water, and 20g granulated sugar, heat until simmer, put in each bagel, cook for 20 seconds each side.
    5. Preheat the oven to 410℉(210℃). Line the baking tray with a baking mat or parchment paper. Send the bagels into the oven to bake for 16 minutes. Let the bagels cool down then serve. The filling I have with the bagels is blueberry sauce & cream cheese mixture.
