Soup season means it’s time to make some French Onion Soup🧅 I used Martha Stewart’s recipe- it’s simple yet packed with rich flavours. Remember you will be quite smelly after making this but totally worth it😉
Ingredients:
4 Tbsp unsalted butter
1 Tbsp extra virgin olive oil
2 pounds yellow onions, cut in half lengthwise and sliced ¼ inch thick
1 tsp sugar
1 Tbsp flour
½ cup dry sherry
3 ½ cups beef stock
2 tsp chopped fresh thyme
Salt and pepper
1 small french baguette, sliced
1 ½ cups medium hard cheese such as Gruyere, Fontina or Swiss, shredded
Instructions:
Melt butter and oil in large dutch oven pot over medium heat. Add onions and spread into thin layer. Sprinkle with sugar and cook until carmelized, about 35 to 40 minutes.
Sprinkle flour over onions and stir to coat. Add sherry, stock and thyme and bring to simmer. Cook partially covered for about 30 minutes. Season with salt and pepper.
Preheat broiler. Arrange bread on baking sheet and broiler until golden, about 1-2 minutes per side.
Ladle soup into bowls. Arrange on baking sheet. Place 2 slices of bread in bowl to cover surface completely and top with desired amount of cheese. Place under broiler until cheese is melted and crusty. Serve immediately.
