French Onion Soup

I promised this recipe to my mum, so here we go.

You will need:
– 4 large sweet onions, thinly sliced
– 3 tbs butter
– 1 tbs olive oil
– 8 cups beef broth
– 1/2 cup dry white wine (optional)
– 1/8 teaspoon each cumin, dry oregano, dry sage, ground cardamom
– Salt and pepper
– French baguette, sliced
– Gruyère cheese, grated

Instructions:
1. In a large pot, melt butter and olive oil over medium heat. Add sliced onions and cook until caramelized, stirring occasionally.
2. Add spices and mix well.
3. Pour in the beef broth and white wine (if using). Bring the soup to a simmer, then reduce heat and let it simmer for about 30 minutes.
4. Preheat the oven to 380F. Place baguette slices on a baking sheet and toast them.
5. Ladle the soup into oven-safe bowls, top each with a few slices of toasted baguette, and sprinkle generously with Gruyère cheese.
6. Place the bowls into the oveb until the cheese is melted, with a golden brown crust.
